It all starts with the vine, it continues with the grapes that are the heart and soul of every brandy, including Dvor. This noble fruit delights again and again every year, giving the Court exceptional, noble aromas. The secret is recognizable  the sophistication and unique characteristics of the Court lie in the choice of several similar, yet special ones  varieties  and exceptional  ground  at which  the vine grows.  For  Court  we take  only grapes from old vineyards, vines older than 50 years  and varieties that have been growing on the soil of Plešivica for hundreds of years, which we can freely say have always been present there.

Climate and soil of Plešivica, location  vineyards  characterized exceptionally  marly, gravelly and sparse  ground  with lots of sunny days and enough rain, bringing the grapes to perfection  maturation. The grape varieties used in our Dvor are mostly tribal, kraljevina, šipelj, lipovina, belina and graševina  which characterizes elevated  content  acids and lower sugars,  throughout history proven  important factors  for brandy quality.

The harvest takes place after  summer heat, between late September and early October. Each bunch is carefully and gently picked  diligent hands of local farmers which further contributes to the style of the house Dvor. Grapes are harvested in a balance of ripeness and acidity, the most favorable for the production of brandy.  The clusters are tender  pressed, and the juice is left to ferment for five to seven days. A young white wine was obtained,  with an alcoholic component of 8  to 10  percent, dry and sour, unclarified, no added sugars, cloudy, perfect  for distillation.
